June What's Up Wednesday

Happy Wednesday!

Instead of my normal WIWW post, I am sharing "What's up" in my life :) 

1. What I'm Eating

The other week, I was in charge of fixing dinner for the whole family...I am not the chef in my family, but I was extremely proud of this meal.
I made a beef enchilada casserole (Pinterest recipe here) & a fiesta ranch dip (also a Pinterest recipe, here )

I grabbed a few pictures before my family ate it ALL!
Also, I think the corn dip recipe goes really well with tortilla chips, but in the efforts of eating more vegetables, I chose to make a veggie plate to dip instead.

2. What I'm Reminiscing about

We spent last week at our favorite family vacation spot. Nags Head. I have been going here every summer for 13 years. I have a lot of memories of this place, and it was fun to reminisce on those times.

3.What I'm loving

This year I got the privelege of working with Mrs. B, who turned 100 last October. This month, I got to spend the weekend with her in my hometown as she celebrated her granddaughter's wedding. I love the joy she brings to my life & the relationship I have gained with her family.

4.What I've been up to

I have eased into my summer schedule. With the exception of being a beach bum, I work part-time at Etc. Consignment Shoppe. I can also be found spending time with family,  Zack & friends :)

5.What I'm dreading

I am dreading packing for school. I loathe packing! I always panic thinking I wont have what I need, so I end up with everything but the kitchen sink in my apartments!
Every time I think about what I need to do, I convince myself it can wait.

6. What I'm working on

I am working on getting the last few requirements settled before heading to grad school. I have spend the last week scheduling CPR training, background checks & sending out my final transcript.
Whew! I am ready for it to be done!
I am also scheduling posts, and adding more link-ups into my regular posts.
I couldn't do it without a paper calendar


7. What I'm Excited about

 I am excited to start on my IKEA Rast Hack. I may have volunteered Zack to help me renovate my nightstand & I have finally decided on the style I want to go with.
Thankfully, he's on board with the plan...Ideally, next month, we will have completed it. ;)

8. What I'm Reading/Watching

I am completely hooked on Parenthood. I have seen a lot of other bloggers rave about the show. I started watching it on vacation. The room I was staying in had ROKU remote, and I fell in love with the convenience of it. I finished the whole first season! I can't wait to watch more!

9. What I'm listening to

Zack has downloaded new music from "upcoming artists" and I may, or may not have stolen his playlist ;)
I am loving Luke Combs, who is from my hometown & also went to my alma mater!

11. What I'm doing this weekend

I have no big plans. I am house sitting for a few weeks, so I will be hanging with some sweet puppies  & maybe sneaking in a much-needed date night!

Yes and that is what retirement is all about, the choice to do nothing if we choose, love it!!

12. What I'm looking forward to next month

I am excited for the whole month! I have a lot of items I want to get crossed off of my to-do list, including the Ikea nightstand, another beach trip, & packing for my new adventure.


13. What else new

I am starting a new course put on by the Vanilla Tulip in promoting your social media! I am so excited to see what I learn through this process.

Bonus: What are your 4th of July Plans

I don't have anything big planned for the 4th of July, especially because I just realized it's NEXT Saturday!?! #summerslowdown

If we do plan something, it'll be something small, & similar to our Memorial Day cookout

  1. I just watched the first episode for Parenthood at the gym yesterday and can't wait to watch the 2nd one! I'm thinking this will give me motivation to work out during the entire show since it's so good!

  2. Sounds like the beach was awesome! I want a beach vacay! Oh my gosh I LOVED Parenthood. We binge watched it a couple months ago. I was sooo sad when it was over...I need more!
